Here’s one for you moms who need to whip up an emergency dinner. Although I run my own business from home, many days I get so caught up with work that the dinner prep hour sneaks up on me. Last night for example was one of them. I only had 1 hour before hubs got home so I quickly whipped this up.
Ingredients
- 3 pieces of chicken breasts (it was semi frozen too! LOL)
- Oil
- Durkee Grill Creations Smoky Mesquite Seasoning (I always have some kind of grill seasoning at hand)
- 3 pieces of aluminum foil large enough to wrap the chicken pieces
- Water
How
- Place chicken pieces in the middle of aluminum foil. One piece of chicken on each foil
- Sprinkle seasoning over chicken
- Spoon a teaspoon of oil and drizzle over chicken
- Water if your chicken is already thawed. If frozen - yes! I do cook chicken from frozen! no need for this.
- Wrap the chicken in the foil like a pouch
- Bake in oven - I put cranked it up high 450F for 45 minutes. Thinking back, 30 minutes was probably enough because it was half thawed but you may need that much if it was frozen.
The chicken smelt heavenly and was still very moist and yummy since the pouch seals in all the flavor. I paired that with come cheesy broccoli and rice. The loved it. Hubs and kiddos.

One of the things that I really miss after moving to US is all the Malaysian kuih muih. You just cannot buy them even at asian grocers who sell mostly Vietnamese kuih muih. They look the same but are not. I like all kinds of kuih and know how to make a small number of them from school days but you gotta admit some of them are really difficult to make. Ah that’s the price I pay for being lazy too.
For the longest time, I’ve been pining for Muah Chee. So has my husband who absolutely loves it. My mom told me it wasn’t really difficult so I decided it was time to experiment. As always, the search engine is your best friend. I found several recipes, some sounded a bit more complicated than others, but almost all of them have the same ingredients and steps. This is what I did and I’ve been so happy they turned out lovely.
This recipe makes a small batch, more than enough for two.
Ingredients
- Glutinous rice flour - 4 oz
- Oil - 1 tbsp
- Water - 3/4 cup
Peanut mix
- Roasted peanuts - 1 cup
- Sugar - 1/4 cup (adjust this to your liking)
How to:
- I suggest you chop the sugar and peanuts separately in a chopper. I like the sugar to be very fine and the peanuts chunky, then mix the peanuts and sugar together.
- Mix flour, water and oil in a pyrex or microwave safe dish.
- Microwave mix on high (1100w) for about 3 1/2 minutes.
- Mixture would be thick and sticky now. I suggest allowing it to cool down a little bit so it’s not piping hot but warm enough so it’s still soft and pliable.
- Spoon some into the peanut mix, use scissors to cut into small bite size pieces and roll each piece in the peanut mixture to coat.
- Repeat until all dough is finished.
- Serve

Tried this using my own imagination the other day. Yum yum! Eggplants stuffed with fresh fish paste, pan fried till eggplants are soft, then braised in spicy sauce with some salted bean, chili garlic sauce, a tad of dark soy sauce for color.
