Asian Coleslaw Salad

I LOVE this salad. I make it all the time for parties.

Ingredients for salad :

1 bag coleslaw

1 red onion (or any other sweet variety)

1 green pepper

1 tomato

2 ramen noodles (Oriental) – only need 1 packet of seasoning

4 tbsp. butter

3 tbsp. sesame seeds

1 cup sliced almonds

Directions :

Heat butter, brown crumbled ramen noodles & sesame seeds, set aside to cool. Once completely cooled, mix in salad.

Ingredients for dressing :

3/4 cup olive oil

1/4 cup vinegar

1/2 cup sugar

2 tbsp. soy sauce

1 packet seasoning

Bring all ingredients to boil. Once cooled, pour over salad.  

NOTE : If you’re making this to be eaten later (e.g. for a party), I would suggest only mixing the sauce and the sesame seeds & ramen noodles just before serving so it won’t go mushy.

    Hey Carin!

    I have this same recipe too – my DH tried it at one of his command potlucks and hunted down the person who made the dish to get the recipe from her. He loved it so much! Its really flavorful and its something different from the run of the mill salads.

    I’m having a party this weekend and I’ll try to make this. Looks great! I love anything with a hint of sesame seed in it…very oriental and fragrant!

    Yeah, I also hunted someone down to get the recipe from her. It’s SO good. I like this cos’ it’s a very “light” salad. I can eat bowls of it. For those of you who are planning to make this, let me know how you all enjoy this dish.

    I did try it. Have been having this salad for lunch the past 3 days. It is very nice and it tastes a lot like “Lo Yee Sang!” And I love Yee Sang.

    Had to improvise because didn’t have a few things in my pantry. For the dressing, I used Canola oil but I bet the olive oil would be so much better. Also, I used White wine vinegar since that’s what I had and it turned out nice because white wine vinegar is less sour IMO.

    Didn’t have almonds or sesames but if I were making this for a party, would include that. I wonder if it would still work if the oil is cut down on the dressing. Also, would think it’s better for the heart if the noodles were browned in Olive Oil.

    I’m glad you like it. The original recipe I got just said use “oil”. But I like using olive oil for everything. And these days I’ve been using Enova. So, I only use olive oil/Enova for the dressing. If you use that, you don’t have to worry about cutting down on the dressing :) I think it tastes better with the butter when browning the sesame seed and noodles. But just cut down if you don’t want too much.
