Baked Burrito - Kid Tested

November 15th, 2007 by Lynette

Baked BurritoWe just had this for dinner and oh it tastes great! It’ll fill you up quick and good though so a little really goes a long way - trust me. Here’s what you need.

  • 1 can of 16 oz refried beans
  • 1 1/2 lb ground beef. I used a mixture of Jimmy Dean sausage + 93% ground beef.
  • 1 envelope of Taco seasoning
  • 1/4 onion chopped
  • Shredded cheese. I just used plain old shredded cheddar.
  • 1 tube of crescent rolls

For garnishing (optional):

  • Shredded lettuce
  • Diced tomatos
  • Olives

Here’s what you do:

  1. Cook ground beef until no longer pink. You might not want to cook the liquid down since you’ll be baking this later.
  2. Add onion, taco seasoning and refried beans. Mix it all up real good.
  3. Spray baking pan with cooking oil. Unroll crescent rolls and line the pan with it.
  4. Spread the beef mixture in the pan.
  5. Sprinkle top with shredded cheese. Bake at 350 F for about 20 minutes. Or until the crescent rolls are cooked, the cheese melted and brown.
  6. Garnish before serving if desired

My kids loved it. In fact, two of them are having her third helpings as I write. I think it’ll make a lovely dish for pot luck or a party as well. Highly recommended.

Sounds like a tasty recipe. I’m suprised that the kids liked the refried beans though. Mine usually don’t like them.

Hey RecipeBits, Yeah they kinda surprised me too because they don’t eat beans. But I think I put in more meat.
