Stuffed eggplants in very spicy bean sauce

Tried this using my own imagination the other day. Yum yum! Eggplants  stuffed with fresh fish paste, pan fried till eggplants are soft, then braised in spicy sauce with some salted bean, chili garlic sauce, a tad of dark soy sauce for color.

I made these for a recent party and it was quite a big hit. Easy to make using the wonton wrappers. Filling can be anything you like. I made a vegetarian filling with peanut sauce.

Ingredients:

1 package of Wonton wrappers

Filling:
Carrots, cucumber, cilantro, fried tofu. Julienne all these ingredients and mix well in a bowl with some sesame seed oil, salt and pepper. Chill in the refrigerator.

1. Heat oven to 375 F. Slightly grease a tray of mini muffin cups.

2. Gently press one wonton wrapper into each muffin cup until the entire tray is filled with wonton wrappers.

My Meals Aren’t Working Out

Yuck

Are you adventurous when it comes to food? I am. Love experimenting new foods, trying new recipes or simply dream up some as I go. Unfortunately that is not so great when you have to feed a family. Especially one that consists of picky eaters.

Every single item on my menu this week is a brand new dish. Probably not a good idea in hindsight. On Monday, we had Easy Italian Stew. I knew my family is not big on Italian dishes but thought why not try. It tasted OK and I actually enjoyed it but they didn’t.

Sausage Cheese Meatballs

We had these at my sister-in-law’s last weekend and boy was it good! So, I asked for the recipe which was surprisingly simple. Made it tonight and sad to say I overestimated the cook time. But, my mistake is your gain.

Here’s the recipe passed on verbally:
Ingredients:
1 lb of sausage (1 tube)
1 whole bag of cheese (about 4 cups)
2 cups Bisquick

Baked Burrito – Kid Tested

Baked BurritoWe just had this for dinner and oh it tastes great! It’ll fill you up quick and good though so a little really goes a long way – trust me. Here’s what you need.

  • 1 can of 16 oz refried beans
  • 1 1/2 lb ground beef. I used a mixture of Jimmy Dean sausage + 93% ground beef.
  • 1 envelope of Taco seasoning
  • 1/4 onion chopped
  • Shredded cheese. I just used plain old shredded cheddar.
  • 1 tube of crescent rolls

For garnishing (optional):

  • Shredded lettuce
  • Diced tomatos
  • Olives
