Banana Chocolate Chip Muffin

I only started baking a couple of months ago when a friend at work got me interested. I decided to start by baking muffins. Initially, I used store bought muffin mix, then I graduated to mixing my own (follow recipe).

Yesterday, I made banana muffin with chocolate chip for the first time, and they came out great. I used the recipe from here.

Baked BurritoWe just had this for dinner and oh it tastes great! It’ll fill you up quick and good though so a little really goes a long way – trust me. Here’s what you need.

  • 1 can of 16 oz refried beans
  • 1 1/2 lb ground beef. I used a mixture of Jimmy Dean sausage + 93% ground beef.
  • 1 envelope of Taco seasoning
  • 1/4 onion chopped
  • Shredded cheese. I just used plain old shredded cheddar.
  • 1 tube of crescent rolls

For garnishing (optional):

  • Shredded lettuce
  • Diced tomatos
  • Olives

Sugar Cookies

This recipe is from a friend. I got it after tasting these yummy cookies. They are SO good. But I have yet to try making them myself. Maybe I’ll make these for Christmas :)   

5 cups flour
1 tsp salt
4 sticks of unsalted butter
6 oz cream cheese
2 cups sugar
2 egg yolks
2 tbs vanilla extract

Make sure all ingredients are at room temperature.

Sift flour and salt together. Set aside.

Instant Yummy Ice Cream

I saw this on one of those home shopping TV shows. They were selling a blender but thought this is such a cool recipe. I don’t have the exact measurements so use your own judgement.

Ingredients: Cream, Frozen fruit e.g. berries and a pack of Jello pudding mix (I think Vanilla would work)

How:
Put frozen fruit in blender, start it up, add cream and pudding mix as you go. Blend it till smooth, voila! Instant ice cream.

Pineapple Bread Pudding

Pineapple Bread Pudding 

Ingredients : 

10 slices bread (you can use white or whole grain)

3/4 cup butter or margarine, melted

5 eggs

1 (20 ounce) can crushed pineapple, drained

1/4 cup dried currants or raisins

1 cup sugar

1 1/2 teaspoons vanilla extract

3/4 teaspoon ground cinnamon

Whipped cream (optional)
