Easy Cherry Cobbler

For this recipe, you will need butter or margarine, a 7 ounce package of Martha White Biscuit Mix (or Bisquick will do), sugar, milk, and a 20 ounce can of cherry pie filling.

Preheat your oven to 350 degrees. Put 1/4 cup of butter or margarine in an 8 or 9 inch square baking dish. Once the oven is ready, put the baking dish in it and melt the butter or margarine. In a medium bowl, mix the buttermilk biscuit mix with a 2/3 cup of milk and a 2/3 cup of sugar. Pour the batter over the melted butter, but do not stir! Pour the 20 ounce can of cherry pie filling over that. Place in the oven and let it cook for 40 to 45 minutes.

Pesto past with Shrimp

The inspiration for this dish came from our vacation in St. Martin 2 years ago. It was my best vacation ever and we hope to go back someday. 

Method

Large shrimp – ¾ lb peeled and deveined

Broccoli florets – 2 cups

Penne rigate – ½ lb

Garlic – 3 cloves, chopped

Pesto sauce – ½ cup

Olive oil

Salt & pepper

Boiled a pot of water seasoned with salt and cook the penne rigate until al dente. At the last 2 minutes of cooking, put in the broccoli florets.

Spicy Chipotle Marinade

This one is not for the faint of heart.  The main component is chipotle pepper with adobo sauce.  As you can imagine, its very very spicy.  Excellent for marinating steaks.  I got this from some food network show and modified it a little.

 So, if you’re ready for some tongue-burning sweet action, try this one.  But do remember that once you add the other ingredients, the “fire” is reduced somewhat but the smoky taste of chipotle remains.

 1 small can of Chipotle pepper in adobo sauce

1/2 cup of dark brown sugar

2 – 3 tbsp of steak sauce

Lynette’s No Fail Rolls

Ok after some pressure from Rita LOL here are my no fail rolls. The only time I ‘fail’ making it is when I don’t proof it enough, or bake it too long.

3/4 cup milk (can substitute low fat or coconut milk is just as good!)
1/2 cups sugar (I’ve used Splenda too and it works nice)
1 1/4 teaspoon salt (after a while honestly, I skipped the salt)
1/2 cup butter/margerine
2 packages active dry yeast
1/3 cup warm water
3 eggs
5 1/2 to 6 1/2 cups all purpose flour (bread flour works best)

Orange Brownies

Recipe was originally from a Paula Deen episode.  I haven’t changed the ingredients except to cut back on the sugar used.  The woman sure does love her butter and sugar.  I took this for waterlily’s get-together recently and it was a hit.  Even my chocolate loving hubby took his share.   This brownie (which is not brown but a light orangey color) is sweet and light with a great orange flavor.   It comes with its own orange cream frosting but I’ve cut that out as the brownie itself is sinful enough.  As with most of the recipes I like, this one is a quick and easy dessert to fix.
