Chicken In Stewed Tomatoes With Cheesy Rice
May 15th, 2008 by LynetteHere’s a real quick, complete and nutritious meal you can make for your family. Prep time only took me about 30 minutes but cook time (because my chicken was pretty frozen) took an hour.
Entree - Chicken With Stewed Tomatoe And Peppers
What:
- 1 Green Pepper
- About 4 lbs chicken (5 pieces of boneless, skinless chicken breasts)
- 1 can stewed tomatoes
- 1/2 pack of spaghetti sauce seasoning
How:
- Pre-heat oven to 350F
- Dice the green pepper, set aside
- Mix stewed tomatoes and spaghetti sauce seasoning
- In a large baking dish, place chicken pieces
- Spoon or pour the sauce mixture over chicken
- Cover with aluminum foil
- Bake in over for 30 mins
- Add/sprinkle green peppers over chicken, uncover dish and cook for another 10 to 15 minutes depending how hot your oven is.
- Server hot
Side Dish - Cheesy Rice
I just used a packet of cheesy rice mix for this. I’m thinking this would also make some nice cheesy rice.
- 1 can chicken broth or about 2 1/2 cup water with one or two chicken cubes (to taste)
- 1 cup rice
- 1 cup cheese or Velveeta
- Milk
How:
- Bring broth to a boil
- Add rice, turn down to medium, cook about 10 minutes stirring regularly
- Add cheese and stir until melted
- If mixture is getting too thick and rice is not cooked yet, add milk
- Turn down to simmer, stir regularly until rice is cooked
