Coastal Living Plus - Fresh Shrimp At A Bargain

Around here, a lot of the men go out on the sea to fish, some as a part time income and some just do it for fun while earning some cash. This year’s haul is fantastic! We just got 100lbs yes you read that right. 100 lbs of shrimp for a steal $3.50/lb. These are not those tiny little ones either. They are 16 count shrimp. Take a look.
If you are wondering what those numbers are, here’s what I learned. 30 count shrimp means there are about 30 shrimps per pound. The smaller the count the larger they are naturally since they’d be heavier. Took me a long time to figure that out!
Anyhow, here’s a great home recipe from my mom. It’s my all time favorite recipe. She has no name for it so I’m inventing one
Soy Sauteed Shrimp
- 1lb fresh shrimp - preferably with shell and heads on. Trim the whiskers if leaving the heads on.
- 3 tbsp soy sauce
- 2 tbsp sugar
- Oil
Method:
- In a bowl, pour soy sauce and sugar onto shrimp. Mix it well.
- Allow shrimp to marinade for at least 1 hour. If you can do this overnight that’s better!
- Heat a little bit of oil in a pan. We are going to pan fry here so don’t over do it. My estimate is about 1/4 inch or less in the pan. Fry shrimp till brown. Don’t panic if it gets very dark brown the soy sauce and sugar caramelizes quickly just make sure it’s cooked.
- Serve and enjoy. Super yummy!
