Muah Chee Cravings Finally Satisfied

One of the things that I really miss after moving to US is all the Malaysian kuih muih. You just cannot buy them even at asian grocers who sell mostly Vietnamese kuih muih. They look the same but are not. I like all kinds of kuih and know how to make a small number of them from school days but you gotta admit some of them are really difficult to make. Ah that’s the price I pay for being lazy too.

Stuffed eggplants in very spicy bean sauce

Tried this using my own imagination the other day. Yum yum! Eggplants  stuffed with fresh fish paste, pan fried till eggplants are soft, then braised in spicy sauce with some salted bean, chili garlic sauce, a tad of dark soy sauce for color.

I made these for a recent party and it was quite a big hit. Easy to make using the wonton wrappers. Filling can be anything you like. I made a vegetarian filling with peanut sauce.

Ingredients:

1 package of Wonton wrappers

Filling:
Carrots, cucumber, cilantro, fried tofu. Julienne all these ingredients and mix well in a bowl with some sesame seed oil, salt and pepper. Chill in the refrigerator.

1. Heat oven to 375 F. Slightly grease a tray of mini muffin cups.

2. Gently press one wonton wrapper into each muffin cup until the entire tray is filled with wonton wrappers.

Chicken In Stewed Tomatoes With Cheesy Rice

Here’s a real quick, complete and nutritious meal you can make for your family. Prep time only took me about 30 minutes but cook time (because my chicken was pretty frozen) took an hour.

Entree – Chicken With Stewed Tomatoe And Peppers 

What:

  • 1 Green Pepper
  • About 4 lbs chicken (5 pieces of boneless, skinless chicken breasts)
  • 1 can stewed tomatoes
  • 1/2 pack of spaghetti sauce seasoning

How:

  1. Pre-heat oven to 350F
  2. Dice the green pepper, set aside
  3. Mix stewed tomatoes and spaghetti sauce seasoning
  4. In a large baking dish, place chicken pieces

My Meals Aren’t Working Out

Yuck

Are you adventurous when it comes to food? I am. Love experimenting new foods, trying new recipes or simply dream up some as I go. Unfortunately that is not so great when you have to feed a family. Especially one that consists of picky eaters.

Every single item on my menu this week is a brand new dish. Probably not a good idea in hindsight. On Monday, we had Easy Italian Stew. I knew my family is not big on Italian dishes but thought why not try. It tasted OK and I actually enjoyed it but they didn’t.
