Sausage Cheese Meatballs
April 12th, 2008 by LynetteWe had these at my sister-in-law’s last weekend and boy was it good! So, I asked for the recipe which was surprisingly simple. Made it tonight and sad to say I overestimated the cook time. But, my mistake is your gain.
Here’s the recipe passed on verbally:
Ingredients:
1 lb of sausage (1 tube)
1 whole bag of cheese (about 4 cups)
2 cups Bisquick
Method:
- Mix all ingredients up in a large bowl
- Shape into balls - about the size of large meatballs
- Bake
That was easy right? It is that easy but here’s my mistake or rather problem. I didn’t know how long this was supposed to cook and how hot the oven should be. When in doubt, I always set the oven at 350 F. When we had them last week, it was also just a touch harder than I preferred.
Don’t get me wrong it was fantabulously yummy. But considering someone in the family has trouble with their dentures, I like to ’soften’ up my dishes.
So, I modified the recipe and added just one jumbo sized egg. Adding eggs also meant I needed more Bisquick since this mixture is now very soft and awfully sticky. Too hard to shape. Another 1/2 cup of Bisquick did the trick nicely.
I made some into patties - thinking this would make it easier to eat on a bun with some yummy lettuce - like a hamburger. The rest were made into meatballs.
Put them on a lightly greased pan, shoved them into the oven for 15 minutes and turned the oven up a notch to 375 F.
Maybe the mistake was turning the oven up a notch, maybe 15 minutes was a tad too long. Maybe it was the dark pan. Sheesh who knows. The bottoms browned considerably - not burnt but much browner and crunchier than intended - certainly not soft. What a bummer.
The verdict, still ultra yummy but this is what I’d do differently for my next batch.
- Keep the oven at 350 or lower
- Bake for a shorter period of time, maybe 10 minutes then turn them over for another 5.
- Brown the sausage before adding them into the mixture. I think this must have been my sister-in-law’s super secret step. This would have made the sausage meatballs much more flavorful.

Mmmm….sounds delish. Might try it. Question: Why do you use Bisquick, instead of regular bread crumbs?

Uhm… I dunno? LOL That’s what she said to use but generally, I like cooking with Bisquick. It has nice flavor and easy to work with.
