Spicy Salmon

September 30th, 2007 by Lynette

I got this from WalMart. Don’t know if you have noticed the recipe racks near the grocery section. Lot’s of recipe cards. This one looked really good but haven’t bought any salmon to try it lately. So I’m documenting the recipe here so I don’t lose it. Hope you all will try it and enjoy.

Spice paste ingredients:
1tbsp salt
2 tsp black peppercorns
2 tsp sweet paprika or pimenton
1/2 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp cumin seeds
2 tbsp canola oil

Salmon:
4 (6 oz) salmon fillets
2 tbsp canola oil
Juice of 1 lemon

Serves 4

  1. Place all spice paste ingredients in blender, process until paste is formed. Rub on tops of salmon fillets, cover and refrigerate for about 4 hours.
  2. When ready to cook, scrape most of spice paste off fish, set aside. Heat 2 tbsp oil in skillet. Place fish in skillet, skin side down and sear.
  3. Turn fillets over, flesh side down. Reduce to medium, cover and cook 8 – 10 minutes until fish flakes with fork. Remove, set aside.
  4. Return reserved spice paste to skillet, add lemon juice, stir 1-2 minutes. Pour over fish.
