Sugar Cookies
October 25th, 2007 by CarinThis recipe is from a friend. I got it after tasting these yummy cookies. They are SO good. But I have yet to try making them myself. Maybe I’ll make these for Christmas
5 cups flour
1 tsp salt
4 sticks of unsalted butter
6 oz cream cheese
2 cups sugar
2 egg yolks
2 tbs vanilla extract
Make sure all ingredients are at room temperature.
Sift flour and salt together. Set aside.
With an electric mixer, mix butter on medium speed for 1 min. Add
cream cheese and continue beating until smooth (about 2 mins). Add
the sugar, increase speed to med/high and beat until fluffy and pale
yellow (about 3 mins). Add the egg yolks one at a time, beating well
after each addition, then beat in the vanilla.
Reduce speed to low and add the flour mixture in 1 2/3 cup
increments. Scrape the sides frequently. Beat until all combined.
Turn dough out onto floured surface. Using floured hands, form dough
into smooth mound and divide into 2 equal portions. Shape each into
a disk and wrap separately with plastic wrap. Refrigerate for at
least 3 hours, or up to 2 days.
Line several baking sheets with parchment paper. Remove 1 dough disk
at a time from the refrigerator and let stand for 10 mins. Place
dough on a clean, floured work surface and roll out to ¼-inch
thickness.
Dip the cookies cutters into flour just before using and cut out the
shapes.
Bake in preheated oven at 350 degrees for 10 to 16 minutes….until
lightly golden on the edges. Cool cookies ON the baking sheet, ON a
wire race for 5 mins, then transfer to a wire rack.
Decorate when cool!
