Jeannie, must the sweet potatoes be that type you mentioned? We can only get the orange type here.

Any kind of potato is OK I think because they’re of the same texture. I am going to venture making it with taro/yam too.
I love making this one because it’s very rewarding to see the colors emerge layer by layer.
