Sweet Tater Casserole
December 14th, 2008 by LynetteWe had this lovely dessert casserole at my friend Carin’s place this past Thanksgiving it was heavenly! Carin was super generous with the pecans and that turned out super.
Ingredients
- 3 cups sweet taters (cooked, peeled & mashed)
- 1 cup sugar
- 2 eggs
- 1 tbsp vanilla
- 1/2 cup butter, melted
Topping Ingredients
- 1 cup packed brown sugar
- 1/2 cup flour
- 1 cup chopped pecans
- 1/3 cup butter, melted
Method:
- Combine taters, sugar, light beaten eggs, vanilla and butter, mix well.
- Pour into a 1.5 qt casserole.
Topping:
- Combine all topping ingredients and mix well with fork until cumbly, sprinkle onto casserole.
Bake:
- Bake at 350 F for 30-45 minutes or topping is golden.
- If you add pecans to the casserole part, add an extra 40 minutes in the oven.
