wonton cups

I made these for a recent party and it was quite a big hit. Easy to make using the wonton wrappers. Filling can be anything you like. I made a vegetarian filling with peanut sauce.

Ingredients:

1 package of Wonton wrappers

Filling:
Carrots, cucumber, cilantro, fried tofu. Julienne all these ingredients and mix well in a bowl with some sesame seed oil, salt and pepper. Chill in the refrigerator.

1. Heat oven to 375 F. Slightly grease a tray of mini muffin cups.

2. Gently press one wonton wrapper into each muffin cup until the entire tray is filled with wonton wrappers.

3. Bake the wonton cups for 10 minutes. Adjust to time to suit your liking of “brownness.” Remove from oven and let cool slightly and the wonton cups should slide off from the muffin tray easily.

4.  Prepare the vegetable filling by mixing in some peanut sauce (or spicy satay sauce) and toss to coat well but not too watery.

5. Fill each wonton cup with the mixed vegetable.

Optional: garnish with cilantro and sesame seed on top. Serve immediately. The crunch factor of the cups lasts for about one hour with filling. It might be wise to just fill enough cups to serve and replenish as you go along so that the wonton cups don’t turn soggy too quickly.
